Vegetable Lasagna

Ingredients

  • Lasagna sheets – soak in hot water
    • Tomato Mix:
      • 400g Chopped Tomatoes
      • 2 Tablespoons Tomato Purée
      • 1 Red Onion – Chopped
      • 1 Small Can of Sweetcorn
      • 1 Courgette – Sliced
      • Fresh Basil Leaves
      • 1 Teaspoon Dried Oregano
      • Sprinkle of Salt and Pepper
      • Dash of Balsamic Vinegar
    • White Sauce:
      • 500g Crème Fraîche
      • 1 Teaspoon Butter
      • 60g Cheddar Cheese
      • 1/2 Teaspoon Mustard
      • 1/2 Teaspoon Nutmeg

Instructions

Make the white sauce. Make the tomato mix by adding the vegetables and herbs into the tomatoes and purée in a pan, saute it until a mix. Grease a baking dish with a dash of olive oil and place a layer of lasagna sheets on it, then a layer of tomato mix, the courgettes and basil placed on top, then a layer of white sauce and repeat with tomato sauce or single layer – a layer of white sauce and cheese slices and sprinkle of nutmeg and black pepper on top. Cook at 160C Fan/180C/Gas Mark 4 for 45 minutes until cheese melted on top and lasagna all soft inside.
