Minestrone Soup

Delicious and full of all vitamins: Vitamin K, Vitamin C, Lycopene, Calcium, Iron, Magnesium, Low fat, some carbohydrates and very tasty!


  • 3 carrots, chopped
  • 2 onions, chopped
  • 1 courgette, chopped
  • 2 cloves of garlic, chopped
  • A handful of kale or cabbage, chopped
  • 2 litres of water
  • 1 chicken stock and 1 vegetable stock cube (organic)
  • 15 spaghetti strands broken into pieces
  • Teaspoon balsamic vinegar
  • Teaspoon thyme
  • Teaspoon oregano
  • Teaspoon parsley
  • Teaspoon basil
  • Sprinkle of salt
  • Sprinkle of Pepper
  • 1 can of chopped tomatoes (400g)


Put all ingredients into a pan and add 2 litres of water, bring to the boils then add the tinned tomatoes to create the Minestrone.
