Lemon and Halloumi Vegetable Risotto


  • 1/2 Lemon, squeezed
  • 1 Celery, 1 stalk finely sliced
  • 1 Onion, finely chopped
  • 6 Baby Plum Tomatoes
  • 100ml White Wine
  • Block of Halloumi Cheese, chopped into cubes
  • 2 Cups of Arborio Risotto Rice
  • 500ml Vegetable Stock Cube, (in water dissolved) or Fresh Stock
  • 2 Garlic Cloves Sliced
  • Herb Mix:
    • 1/2 teaspoon Smoked Paprika,
    • 1/2 teaspoon Parsley
    • 1/2 teaspoon Coriander
    • 1/2 teaspoon Thyme


Saut̩ the onion and celery in the lemon juice Рon a low heat until soft, add the herb mix, salt and pepper and then add the halloumi, the rice and the stock and simmer for 20 minutes until the water evaporated and the rice creamy. Serve with a salad.
